After a few months of absence Foodwini is back with new recipes!  December means festivities, Christmas, new year, parties, family gatherings!!!

These Cheese Puffs are tasty and it’s the perfect savoury dish and make a great starter.  If you love cheese, you want to grab some while they’re still warm.

Ingredients

  • 100 g Butter
  • 250 ml Water
  • 125 g Flour
  • 1/4 teaspoon Salt
  • 3 eggs
  • 125 g grated cheese
  • 1 finely chopped spring onion
  • 1/2 cup frozen corn kennels
  • 1/2 cup grated carrots
  • 1 tablespoon dried mixed herbs
  • 1 tablespoon olive oil

Preparation

  1. In a saucepan, combine butter, water and salt and bring to a boil
  2. Remove from the heat and add flour and mix well, until it forms a ball
  3. Allow the batter to cool for a around 5 minutes
  4. Add eggs, one by one, beating well after each addition
  5. stir in the cheese, spring onion, corn, carrots and mixed herbs
  6. Next, take tablespoons full of mixture and place on greaseproof paper.
  7. Brush the tops with olive oil
  8. bake at around 160 t0 180 C for 20 to 25 minutes
